Scandinavian creamy cucumber salad with dill and fresh garlic is a great side dish to pretty much any meat and potatoes dish you can think of. It is a simple recipe, requiring no cooking and just a few minutes of prep. Great for summer or winter, this is a tasty addition to any meal.

Nothing has quite the flavor of fresh ingredients, so if it’s summer and you have a garden or a farmers market I highly recommend making this fresh! Unfortunately, veggies from the store just don’t have the same crunch or flavor that they do when freshly picked. That being said, Scandinavian creamy cucumber salad is delicious no matter what time of year it is, even if the cucumbers are coming from the supermarket.
Preparing your Salad
As a disclaimer any variety of onion or cucumber will due. As well as fresh or dried dill, it’s really whatever you have available. Any combination with taste great. To begin with, rinse your veggies before using. Slice the cucumbers to the size of your liking. For mini cucumbers I cut them in 1/8 to 1/4 in slices. For a generously sized regular cucumbers I like to cut them into fourths then slice them into bite sized pieces.
Put the cucumber slices in a bowl and sprinkle with salt while you’re chopping the rest of your ingredients and mixing the dressing. The salt will bring out liquid and flavor from the veggie. Add the onions and mix.
The ‘Creamy’ part of your Cucumber Salad
In a separate bowl mix together the cream, greek yogurt, heavy whipping cream, dill, and garlic. Once combined, pour onto the cucumbers and stir.
You might be hesitant to consume garlic raw, as it is known for leaving quite the aroma on your breath. However, raw garlic has so many amazing health benefits and it does taste great so it’s totally worth it! Garlic is good for the gut, has anti viral properties, anti bacterial properties, and can help prevent the common cold just to name a few.
You can enjoy your salad right away or you can refrigerate for up to three days. Scandinavian cucumber salad pairs great with Swedish meatballs.
Scandinavian Creamy Cucumber Salad
A great side dish, no cook, quick prep.
Ingredients
- 2 regular cucumbers or about 5 mini cucumbers
- 1/4 onion, minced (any variety will do)
- 1 clove garlic, minced
- 1/2 C plain Greek yogurt
- 1/2 tsp dill
- 1/2 tsp salt + pinch for the cucumbers
- 1/8 C heavy whipping cream
Instructions
- cut cucumbers into 1/8 in. fourths or halves
- sprinkle with salt and put into bowl
- For the dressing: in a separate bowl combine yogurt, salt, dill, garlic, and heavy whipping cream
- add dressing to the cucumbers and stir until completely covered

This will store in the fridge for up to three days
