Need a new dessert idea?
Oat flour brownies are delicious and can be enjoyed as a snack, dessert, or (dare I say it) breakfast. Now, before you poo poo the breakfast idea because of sugar, maybe question the other breakfasts you or your kids enjoy on a regular basis. Are they as sugar-free as you thought? I totally understand, I’m also trying to eat waaaay less sugar, but 1 cup in a 9×13 pan is pretty ok by me.
How we eat oat brownies
When you hear the word ‘brownie’ you most likely think they are for dessert. You are right, we mostly eat these as a treat after supper. However, we also enjoy them as a snack with whipped cream or even as a ‘baked oatmeal’ sort of thing for breakfast. In our house we usually have the same options/ preferences for breakfast. The kids like either oatmeal or yogurt. I also love yogurt, so it’s not really a problem but once in a while we like to change it up. If there are brownies left over from the night before we like to crumble the brownies into our Greek yogurt in the morning. Up to you! But it’s delicious. If you’d like to try another breakfast recipe try this berry sourdough focaccia or this baked oatmeal with spent grain.
Why oat flour?
Well first, for those who are gluten free, it’s gluten free. If you’re looking for something to bake with besides the flour on store shelves (which is drastically deprived of it’s nutrient value) oat flour is a great alternative. You don’t need to buy it as flour. As long as you have a blender and some oatmeal that’s all you need. It’s also always better to used freshly milled anything. And, if you use a high quality, organic, low processed oats you can be assured those grains are full of “good carbohydrates”, are a source of protein and other micronutrients.
Overall, I like cooking with oat flour when there’s something I want to bake quick and I don’t have a freshly milled, fermented option.
What will I need for oat flour brownies?
- organic oats (milled by you) or oat flour
- organic cane sugar or coconut sugar
- organic cocoa powder
- baking soda
- baking powder
- salt
- eggs
- plain yogurt (sour cream also works)
- butter
- whole milk (or any milk)
- organic chocolate chips
How do I make oat flour brownies?
Step 1:
Blend your oats. You need three cups of oat flour.
Step 2:
Preheat your oven to 350F. Combine all dry ingredients in a bowl.
Step 3:
Combine all wet ingredients in a separate bowl with a whisk.
Step 4: Mix dry ingredients into wet. You can use anything for this… spatula, handheld mixer, stand mixer.
Pretty simple so far, huh? Now just pour everything into a greased 9×13 pan and bake for about 25 min. Poke the middle when your timer goes off, if it’s still goopy put it in for another couple minutes until the fork comes out clean.
Once your brownies are done, eat them! Share them! Enjoy them!
Notes to help:
If overcooked, they could come out crumbly.
They are super good with whipped cream.
Try to grind your oats really fine.

Oat Flour Brownies
Moist, rich cocoa brownies
Ingredients
- 3 C Oat flour
- 3/4 C Cocoa powder
- 1 C Organic Sugar
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- pinch of salt
- 4 Eggs
- 1/2 C Plain yogurt
- 1 Stick butter
- 3/4 C Whole milk
- 1 C Dark chocolate chips
Instructions
- Preheat oven to 350 F
- Blend oatmeal into flour (if you don't have premade oat flour)
- Combine all dry ingredients: oat flour, cocoa powder, sugar, baking soda, baking powder
- In a separate bowl whisk together wet ingredients: eggs, yogurt, melted butter, and milk
- Pour wet ingredients into dry and mix together until combined
- Add chocolate chips and stir
- Pour batter into greased (i used butter) pan
- Bake for 25 min. Poke center with a fork. Add a couple min. each time until done
