If you’re anything like me, you love coffee! I admit, I’m sure I drink too much of it on the regular but it’s something I look forward to. Having a warm drink in hand is a comfort during those fall, winter, and spring months. Whether it’s a coffee, a homemade chai latte, or some other tea- find me at 5am, 10am, 3pm, and in the evening and there’s a warm beverage close by. It’s kinda like a hobbit with food except with drinks.
Ok, you can also use this syrup in other drinks besides just coffee, or even something hot for that matter. Next time you open your cabinet and are wondering what drink you can make with your gin or vodka or whatever, maybe adding a simple syrup and some citrus would do the trick? You can experiment and make what you like!
Why make my own simple syrup?
There are various reasons to want to make your own syrups for drinks. First, you know the ingredients. Second, this recipe is too easy not to do at home. If you can boil water, you can make a simple syrup. Third, it feels good to make things on your own, you feel capable and independent.
ingredients and supplies
- water
- sugar- I used organic cane sugar
- vanilla bean(s)
- small saucepan
- spoon
- small jar for storage- this recipe makes a little less than 1 cup
How do I make vanilla simple syrup?
First, set your saucepan on the burner and add the water. Turn burner on med/high heat and wait for the water to start boiling. Once boiling, add the sugar and stir until dissolved.
Slice your vanilla bean or beans. One or two beans work for this recipe depending on how strong you like the vanilla flavor.
Add the bean(s) to the pot and allow to boil on med/low for 6-7 min. When time is up transfer and pour into your jar. You can use the syrup immediately or store it in the fridge for up to 4 weeks.
What can you use simple syrup for?

- sparkling lemonade
Are there other sugars I can use?
Yes, for sure. You can use brown sugar or coconut sugar. The color, thickness, and flavor will vary slightly but both will be sweet and delicious!

Vanilla Simple Syrup
a so simple to make syrup with vanilla- to be used for hot or cold beverages
Ingredients
- 1 cup water
- 1 cup organic sugar
- 1 or 2 organic vanilla beans
Instructions
- add water to a saucepan and bring to a boil
- set heat to med/low
- add sugar and stir until dissolved- set the timer for 7 min
- add sliced vanilla bean, scraping out some of the seeds into the pot
- store in a glass jar in the fridge for up to 4 weeks
