If you’ve been looking for an easy recipe, try this super simple berry sourdough breakfast focaccia! This is a crowd pleaser for my family and it’s great to have on its own, or with scrambled eggs and a side of bacon.
Why freshly milled flour?
For our family we’ve made the choice to invest in a grain mill. With some research we decided that, if we’re going to eat flour, milling our own is the most nutritious way to do it. The flour on the store shelves is months old and some already rancid, not to mention that there are so many nutrients that are lost during the conventional milling process. Once the grain is crushed it starts to deteriorate quickly. I know there are points to be argued against grains all together but I think we can agree that we’re all just trying to make the best choices for the health of our families. So, if you’re ok with eating flour keep reading!
That being said, this recipe will work with store-bought flour too. If you’re able, I would suggest an organic whole wheat flour.
What can I put on my breakfast focaccia?
Why, anything of course! However, this is a sweet focaccia so I would recommend any berries that you like paired with a cheese maybe that’s usually eaten with fruit. I did strawberries, blueberries, and cream cheese. This also could be a “red, white, and blue” themed food if you’re going for a Fourth of July vibe.
What pairs well with berry sourdough breakfast focaccia?
Whatever you can think of for breakfast…
- crustless quiche
- sausage and scrambled eggs
- fried eggs and bacon
- egg omelet with fresh veggies
- salmon and onion French omelet
- veggie and meat fritatta
In our large(ish) family, it’s really nice to have those meals that are “one pot” meals. Being able to get a wholesome meal on the table in the least amount of steps possible makes life so much easier. If you’re a busy parent you know what I’m talking about. I love the fact that this is made with freshly milled flour AND it’s sourdough to aid in digestion. Add a protein and some fats to your plate and you’re good to go for an easy breakfast. To streamline the breakfast process, I personally would make scrambled eggs stovetop and the focaccia and some bacon on sheet pans in the oven. Get your timing down so it’s all done together and you’ve whipped up something amazing!
How do I make berry sourdough focaccia?
It’s so easy!
- Simply mix your FED sourdough starter, flour, a pinch of salt, water, avocado oil, and flour together and let sit at room temperature for at least 8 hours. Tips: If you want to eat this for breakfast feed your starter the morning before you want the focaccia. In the evening mix the dough and let it sit throughout the night on the counter. Tada! Your dough is fermented and ready to be baked in the morning.
- Spread out on a greased baking sheet
- Add fresh berries and cheese
- Bake at 425 F for about 15 minutes- the berries will be bubbly and juicy
I had some extra Swedish pearl sugar so I added that. I also added some cinnamon. Other spices that would taste yummy are nutmeg and cardamom. You’re the chef, you add what sounds good to you!
I hope you enjoy your sweet focaccia! This is a very versatile recipe that you can make in so many different ways! Just keep to the basic dough recipe and change up the fruits on top. You could even use chocolate chips (for a not so healthy version), bananas, raspberries, blackberries, peaches, apples, etc.
It’s best served with real maple syrup and coffee in my opinion. I like plain black coffee with sweet things but if you like a sweet drink…

Simple Sourdough Breakfast Focaccia
a super simple, delicious, and nourishing sourdough your whole family will enjoy
Ingredients
- 1/2 C active and bubbly sourdough starter
- 5 C freshly milled flour- or whole wheat flour
- 2 1/2 C water
- 1 tsp salt
- 1/2 C brown sugar
- 3 tsp avocado oil
- 1 cup fresh blueberries
- 1 cup fresh strawberries
Instructions
- Combine starter, flour, water, salt, sugar, and avacado oil in large bowl of stand mixer
- mix on med/low with a dough hook for about 5 min- or with a handheld mixer or spoon
- scrape dough off sides of bowl and mix again if needed
- let dough sit at room temp for 8-12 hours (this will ferment faster the warmer your kitchen is)
- preheat oven to 425F
- while preheating grease your 18 x 13 baking sheet
- pour focaccia dough onto pan and spread out with oiled fingers
- sprinkle berries to the top of your dough
- bake in oven for 15min or until edges are a light golden brown and berries are juicy and bubbling
Notes
You can also add cinnamon, cardamom, sugar, nutmeg, etc.
Any berry combination you enjoy can be subsituted instead of blueberries and strawberries
