If you’ve been looking for an easy snack that’s healthy too here you go! These moist, spiced applesauce muffins are sure to please. As always, they are made with freshly milled flour. The tops get perfectly golden and, with not quite a crunch, the perfect amount of ‘done’. We love to eat these as fika, breakfast, or snack.
It seems that, as time goes on, we’ve gotten away from having an official ‘snack time’ in our house. It used to be that every morning and every afternoon at set times we would have our break from whatever we were doing and all sit down to eat a snack. Now that some of the children are a little older, and we’re in the depths of homeschool, those times come and go and sometimes we have a munchie and sometimes we don’t. It’s not that we don’t have a snack per se, just that the day doesn’t totally stop for everyone to do it. It’s more like a flow now. If someone is hungry they are welcome to ask for a piece of fruit and cheese, carrots, these delicious spiced applesauce muffins, etc. There’s always something around… That being said it’s not usually muffins so these are a super special treat!

Did you say maple syrup?!?!
Why yes I did! Did you know that maple syrup actually has a lot going for it? As far as sugar can, that is. It’s lower in calories (and on the glycemic index) than honey and contains many different minerals that other sweeteners do not. As a natural and fairly low-processed sugar maple syrup the better choice for those trying not to spike the blood sugar too much. I realize this is said within a recipe that also includes cane sugar and carbs… we can’t be perfect all the time. Like I said, these muffins are a special treat. We only have two maple trees and still manage to get at least half a gallon if not more!
How do I make spiced applesauce muffins?
First, preheat the oven to 375F and mill your flour if you haven’t already. Then grab two bowls. Mix the wet ingredients in one (eggs, applesauce, maple syrup, milk, and butter). Mix the dry ingredients in the other (flour, spices, baking powder and soda, pinch of salt, cane sugar).
After both bowls are thoroughly mixed, combine them together into one bowl. Line your muffin tin with liners or grease it. For this recipe, filling your muffin tin pretty close to the top creates lovely muffin tops to enjoy after baking.
Place the muffins in the oven and bake for 20 min. While your muffins are baking you can make yourself a nice, steaming mug of coffee or tea to relish in a short while!
